The Meaning of Dergi

Introducing Dergi – a name deeply rooted in Georgian tradition. The dergi, a traditional Georgian jar, has been a vital part of Georgian life for centuries. Historically used to preserve cheese, pickles, grains, flour, and wine, the dergi is not just a vessel but a symbol of Georgia’s deep connection to its land and its people. This iconic jar represents the essence of Georgian life, embodying the practices of preservation, craftsmanship, and the celebration of food and drink, all of which are central to our cultural heritage. It is from this time-honored symbol that our restaurant takes its name.

At Dergi, we honor both the culinary and winemaking traditions of Georgia. Our concept is a seamless fusion of traditional Georgian gastronomy and the artistry of wine, creating a dining experience that reflects the depth and authenticity of our heritage.

Our mission is to offer a refined yet authentic experience that celebrates the essence of Georgian culture. Through the careful selection of local ingredients, the preservation of ancient culinary techniques, and a deep respect for the tradition of Georgian winemaking, Dergi aims to transport you to the heart of Georgia, where every meal is an invitation to explore the rich history and vibrant flavors of this ancient land.

About the Building

It is with great pleasure that we welcome you to this historic building, constructed between 1934 and 1936.

Nestled at one of the iconic gates of Prague, this space once hosted the renowned student club Vltava, which flourished in the last century. On this very stage, the legendary Karel Gott and Karol Wagner began their illustrious musical careers.

Over the years, this venue became a gathering place for some of the most celebrated artists, musicians, and intellectuals of the city, adding to its rich legacy as a center of cultural and artistic exchange.
